June 24th is National Pralines Day! So wait, you want me to cook up some sugar, butter, and milk… and then slather it on a nut? IN. Unfortunately the directions in my vegan baking book were a little vague regarding how long to let the mixture thicken. There was a point when it reached that perfect consistency, but by the time I had the mixture removed from the pan and on the wax paper- we were about 16 seconds past perfect. Unfortunately, in the baking world, those 16 seconds matter. So, maybe they’re not beautiful, but I fully intend to allow myself to get sick tonight eating too many of them, because these pralines are actually amazing.
