June 26th is National Chocolate Pudding Day! No nostalgia here, pudding was never my go-to snack as a kid, but I was interested in this recipe from the Joy of Vegan Baking cookbook because it used kudzu root starch as a thickener, and I had never heard of such a thing. Check it out on Wikipedia, kudzu has all sorts of uses! And, lo and behold, one of them is the ability to thicken liquids to a pudding consistency :). The end result? Delicious dairy-free chocolate pudding.
June 24th is National Pralines Day! So wait, you want me to cook up some sugar, butter, and milk… and then slather it on a nut? IN. Unfortunately the directions in my vegan baking book were a little vague regarding how long to let the mixture thicken. There was a point when it reached that perfect consistency, but by the time I had the mixture removed from the pan and on the wax paper- we were about 16 seconds past perfect. Unfortunately, in the baking world, those 16 seconds matter. So, maybe they’re not beautiful, but I fully intend to allow myself to get sick tonight eating too many of them, because these pralines are actually amazing.
June 23rd is National Pecan Sandies Day! Pecan what?! Well it took a trip to Google, but I realized that Sandies is just another name for Keebler’s pecan shortbread cookies. I don’t think I’ve eaten them in years. Found a recipe, veganized it, and the end results were pretty good! They really melt in your mouth. A few reviews suggested substituting half brown/half white sugar instead of all white, and if I make them again I think I’ll give that a go, just to add a bit of flavor to the shortbread.
June 17th is National Apple Strudel Day! You know how they say it takes a village to raise a child? Well, it definitely took a village to make this strudel, and for that I owe gratitude to all the women in my family who each in their own way helped make this strudel happen, pitfalls and all. The end result? A surprisingly tasty treat, with homemade vanilla sauce on top!
After an amazing two-week trip to Peru, I’m back to the blog with National German Chocolate Cake Day (June 11th)! German Chocolate has never been my go-to cake (and as you can tell from the photo, I prefer cupcakes to cake any day!) but it was fun to make something I’ve never made before, and really.. you can’t go wrong mixing chocolate and coconut.
