National Cherry Cheesecake Day

My apologies for yet another blog hiatus, but after an awesome ten day road trip to Portland (aka vegan food mecca) I’m back this April 23rd for National Cherry Cheesecake Day! I was hesitant to attempt to veganize this one as I didn’t see how I could make a dairy-free version that would taste remotely like real cheesecake, but I found a recipe online that gets so close it’s scary. Unfortunately I’m thinking I should have sprayed the pan before I baked the cheesecake as the crust has no intention of being removed anytime soon. Luckily I was able to pry the sides off so it wasn’t a complete loss, but I foresee some serious soaking and scrubbing in that pan’s future.
