National Pistachio Day

February 26th is National Pistachio Day! Last night I was staying at the hostel in Point Reyes without cell phone reception or an internet connection so I couldn’t post to this blog, but I did use the hostel kitchen to make roasted brussels sprouts with caramelized onions and toasted pistachios (the recipe came  from Colleen Patrick- Goudreau’s book “The 30-Day Vegan Challenge.”) Delish! And the dish tasted even better this morning for breakfast on the beach, cold from a night in the fridge!
