February 24th is National Tortilla Chip Day! Instead of making tortilla chips (boring!) I bought tortilla chips and used them in tortilla soup. Yum yum yum! The chips went both in and on top of the soup- so I think the holiday was duly celebrated. I also topped the soup with fresh avocado and Daiya (vegan!) cheese. Luckily I have guests coming over tonight because the recipe I used was no joke, and there is a massive vat of tortilla soup in the kitchen right now!

Tortilla soup is one of my all time favs π
I have a slow cooker recipe that is really good. I fry up flour tortillas to cut into strips on top instead of chips though. Yours looks sooo good it makes me want to have it for din din pronto π
