February 22nd is National Cook a Sweet Potato Day! (It’s also National Margarita Day but unfortunately I’m working the night shift tonight… I expect the rest of you to take care of celebrating that one without me!) I was a bit short on time today so I settled on making sweet potato fries. They’re such a simple snack- just chop up a sweet potato however you like your fries, cover the fries in olive oil and your favorite spices, and stick em in the oven at 450 for 10 to 20 minutes, flipping them over once or twice & keeping an eye on them to make sure they don’t burn. Done.
