January 20th is National Cheese Lover’s Day! Count me in. Not yet during this food adventure have I been so torn on how to celebrate a holiday as I was today. Pizza, baked ziti, cheese soup, mac’n’cheese, fondue… the options were endless, but I settled on one of my favorite cheese dishes, my mom’s baked brie. It’s a round of brie baked with cranberries and toasted almonds in a cream cheese pastry, and it is delicious.
